Cooking Instructions
- Grab a large mixing bowl and begin to chop your onions, tomatoes, cucumbers, and cilantro.
Tips
- Make sure to refrigerate ceviche at least 2 hours before serving, ideally for at least 6 hours to allow flavors and juice to infuse evenly.
- Mix ceviche around in bowl before serving to make sure all flavors are infused.
- If you decide to make this ahead of time or for meal planning, it is best to add in avocados until time of serving to prevent discoloration and keep the bowl as fresh as possible. If this is going to be served within the same day then feel free to add in avocados and not worry about discoloration.

Chickpeas
Before starting anything you will have to choose whether you will be using canned chickpeas or raw/dry chickpeas. I’ve used raw/dry chickpeas and if that is the case for you as well you will need to get your dry chickpeas and leave them soaking in a bowl of drinking water, fully submerged, for at least 4 hours so they can soften and expand to their “normal” size. In either case, the first step is to wash your chickpeas and once washed and ready to use, set aside in a large bowl.
Vegetables
You’ll love chopping away all the colors of the rainbow with this dish! The chopping of vegetables is the biggest portion of this dish but luckily it’s pretty straight forward as you’ll want to get all your vegetables diced into little cubes.
